Sesame Lemon Chicken



1/2 cup light soy sauce (Japanese style)
1/2 cup freshly squeezed lemon juice
2 teaspoons sesame oil
1 teaspoon sugar
1/4 teaspoon salt
2 whole chicken breasts (about 2 pounds), halved



1. In a bowl, combine the soy sauce, lemon juice, sesame oil, sugar, and salt.

2. Arrange the chicken breasts in a single layer in a shallow glass or ceramic dish. Pour on the marinade and let stand at room temperature for 1 hour, turning and basting frequently (see Note).

3. Prepare the grill or heat the broiler. Cook the chicken breasts 6 to 8 inches from the heat for 4 to 6 minutes on each side, starting with the bone side toward the heat. Baste and turn several times during the cooking process.

Note-You can also marinate the chicken in a ziplock bag.
